This is a no-knead bread recipe incorporating ground pumpkin seed for added flavor. Pumpkin seeds are packed full of valuable nutrients. Eating only a small amount of them can provide you with a substantial quantity of healthy fats, magnesium and zinc. Because of this, pumpkin seeds have been associated with several health benefits. These include improved heart health, prostate health and protection against certain cancers. What’s more, these seeds can be easily incorporated into your diet such as in this delicious easy to prepare bread loaf.
To start, in a 4 quart bowl, add the bread flour, dough conditioner, active dry yeast and salt. Whisk a few seconds to blend.

1/2 cup unsalted shelled pumpkin seed
1 cup bread flour
1 cup all-purpose flour
2 tsp dough conditioner
1 tsp active dry yeast
3/4 tsp salt

Warm the water to 100F-110F and dissolve the honey. Add to flour mix along with the extra virgin olive oil. Mix with a spoon until combined, cover with plastic wrap and let stand for 4 hours. During this time there will be a three fold increase in volume as the yeast takes hold and fermentation begins.

1 cup water
1 tbsp water
1 tbsp honey
1 tbsp extra virgin olive oil

At the end of the initial fermentation, scrape the contents onto a well floured surface. Sprinkle flour on the top and also your fingers. Flatten just a bit, fold over 1/3 from right then 1/3 from left. Rotate 90 degrees and repeat for a total of 4 times. Shape into a loaf 12″ long and place in a 4.5″ x 12″ loaf pan. Place in a room temperature oven and let rise 4 hours.
