Roasted Corn Chowder
The Story
There’s nothing quite like a hearty bowl of soup to chase away the chill of late fall and the deep freeze of winter. After a day spent in the snow, wrapping your hands around a steaming bowl of rich, savory soup feels like coming home.

The Ingredients
  • 5 slices bacon
  • 4 15.25oz cans whole kernel corn
  • 1 medium onion
  • 2 stalks celery
  • 2 medium carrots
  • 1 potato
  • 1 48oz can chicken broth
  • 1 tbsp minced garlic
  • 3/4 tsp dried thyme
  • 2 tbsp butter
  • salt and pepper to taste

The Preparation
  1. Dice onion, potato, carrots and celery.
  2. Coat frozen corn evenly with olive oil
  3. Brown bacon in a large stock pot.
