Mango Pie

The Story
Mangoes in a pie? Who would have thought! But one bite and you'll understand why it's pure genius. The Ingredients
  • 3 mangoes, peeled and sliced
  • 1/2 cup frozen cranberries, thawed
  • 3/4 cup monkfruit sweetener
  • 1/4 cup cornstarch
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 pkg or 2 pie crusts

The Preparation
  1. Preheat the oven to 400F.
  2. In a bowl combine all of the ingredients and mix until everything is distributed evenly.
  3. roll out bottom crust
  4. add ingredients
  5. cut upper crust into strips
  6. lay over pie
  7. brush strips with egg wash
  8. bake at 400 for 15 mins then 375 for 45 mins
  9. move to cooling rack and allow to cool at least 1 hour
