- 3 mangoes, peeled and sliced
- 1/2 cup frozen cranberries, thawed
- 3/4 cup monkfruit sweetener
- 1/4 cup cornstarch
- 1 tbsp lemon juice
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- 1 pkg or 2 pie crusts
- Preheat the oven to 400F.
- In a bowl combine all of the ingredients and mix until everything is distributed evenly.
- roll out bottom crust
- add ingredients
- cut upper crust into strips
- lay over pie
- brush strips with egg wash
- bake at 400 for 15 mins then 375 for 45 mins
- move to cooling rack and allow to cool at least 1 hour
