I've been optimizing my no-knead bread recipe for some time.
Dry
- 3 cups King Arthur bread flour
- 2 tbsp diastatic malt
- 1 tbsp active dry yeast
- 1 tbsp dough conditioner
- 3/4 tsp salt
- 1 1/2 cups water
- 2 tbsp raw honey
- 2 tbsp extra virgin olive oil
In separate bowls, mix the dry ingredients and wet ingredients. Warm the wet ingredients in the microwave on high for 30 secs.
Preheat the oven to 400F.
I used King Arthur bread flour for this as well as other bread flours.
